Lace Cookies

I am a chocolate lover through and through.  I think about it all day long and wonder what chocolate I will enjoy each day.  Hmm – I wonder if that is my weight issue… nah.

But these cookies I’m sharing today are not chocolate and are one of my favorite desserts to enjoy.  They are light, but chewy, and make the perfect ladies tea kind of dessert.  Surprisingly, I don’t make them that often myself because my wonderful mother still makes them for me as a surprise.  Oh, I love her!

You won’t be able to eat just one though!

Lace Cookies

  • 1 cup regular oats
  • 1 cup sugar
  • 1/2 cup melted butter
  • 3 Tbsp. flour
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla
  • 1/4 tsp. baking powder
  • 1 egg

Preheat oven to 350 degrees. Mix all dry ingredients together and add slightly beaten egg, vanilla, and melted butter.  Drop dough by 1/2 teaspoonfuls onto foil-covered (I used parchment paper) cookie sheets.  Separate well as they spread!  Bake for 8-10 minutes or until golden brown.  Cool on foil (or parchment paper) then peel off carefully.

Some other ideas:  Before they cool roll them into tubes.  You can leave them like that or dip them in chocolate.  Also, you could dip the flat ones in chocolate too!  These melt in your mouth – I know you’ll love them!
