Are you having crazy weather this winter? Here in the Midwest we’ve hardly had any snow and more warm days than cold. But soup is my favorite meal this time of year and this one is quick, easy, and flavorful! Hope you enjoy it, too!
Baked Potato Soup
- 5 large baking potatoes
- 1 onion, diced
- 1-2 T butter
- 3 cups skim milk
- 1 pint fat-free half and half
- 1 teaspoon salt
- 1/8 teaspoon pepper
- shredded cheddar cheese
- bacon, cooked {I use turkey bacon}
Bake or microwave the potatoes until done. Let cool. Cut into pieces and set aside.
In dutch oven, melt butter and saute onions. Add potatoes, milk, half and half, salt, and pepper. Cook until heated through.
Serve with shredded cheese and crumbled bacon on top.
Note: If the texture of the skin would bother you, just scoop out the potato and don’t use the skin. We like it with the skin, though.
