It seems that everyone has their favorite Christmas cookie. Sure, there are plenty of cookies that you like, but there is that ONE cookie that you look forward to every Christmas. For me, that favorite is Meringue Cookies. They are so easy to whip up, and they cook overnight in an oven that’s been turned off. The hardest part is waiting at least 3 hours before opening the oven door.
Meringue Cookies
- 3 egg whites
- 1 cup sugar
- pinch of salt
- 12 oz chocolate chips
- 1 cup chopped nut (optional)
Preheat the oven to 350 degrees F.
Combine the first three ingredients and beat on high speed until very stiff.
Stir in the chocolate chips (and/or nuts if using them.) Drop rounded spoonfuls onto a foil covered cookie sheet.
Put in the preheated oven, and turn the oven OFF. Leave untouched for at least 3 hours – DO NOT PEEK!
See – what could be easier? As a matter of fact, they’re so easy that I’m not sure why I only make them at Christmas time!

My son and I made these. I put the chocolate chips in the blender first. They were so easy and yummy, too.

ok, I JUST mixed them up….I swear I did something wrong…my mix looks NOTHING like that pic….:( (it’s all runny) I’ll see in the morning, but I beat them egg whites for like 30 minutes on 8 in my kitchenaid…and they just didn’t thicken….?

It should have a similar consistency to a really thick pudding – except light and fluffy if that makes any sense. Sometimes, if you get any yolk at all in the egg whites, they won’t beat up right – Did they ever form any kind of peaks?
no peeks…just kinda ooozed onto the cookie sheet…haha! Everything cant be perfect first time around. I’ll try again tomorrow. How long SHOULD it take??? and if I use my stand mixer, should I use the mixer blade or the whipping blade? I determined to make these “easy peasy” cookies
Hmm, I’m not really sure how long it takes me – but, I did find a couple of articles on beating egg whites that might be helpful. The most important thing seems to be that everything be super duper clean AND dry. Also, they suggest taking the eggs out for an hr before beating so that they come to room temperature.
