Refreshing Watermelon

My hubby bought a whole watermelon and although we like watermelon, it wasn’t going away as fast as I needed it too… those darn things take up a lot of space in the fridge!  I came across a recipe in my Taste of Home magazine that sounded good, so I gave it a try.  It was surprisingly cool and refreshing.  Super easy to make too!

Watermelon Cooler

  • 2 cups lemonade
  • 3 cups seedless watermelon, coarsely chopped
  • 1 cup crushed ice

In a blender, combine all ingredients; cover and process until smooth.  Pour into chilled glasses; serve immediately.

Notes:  I didn’t crush the ice or measure the watermelon too closely.  Just tossed it all in the blender.  Makes 4 servings and 1 cup equals 86 calories, 0 fat, and 1 gram of fiber.

That looks wonderful! Sometimes I don’t buy watermelons because of all the mess, but this is contained. :-)
