They Call Me "The Lunch Lady"

Breakfast at Our Table in Our House
In the morning, the school aged children are responsible for their own breakfast.   They choose to have stuff like a bowl of cereal, waffles with maple syrup, bagels with peanut butter or cream cheese, yogurt and granola, along with various fruits and/or juices;  they do a pretty good job at it.     Me?  I’m at the coffee pot waiting for the brewing to finish so that I can obtain my first cup.

The school morning flies by and before we know it; it’s lunch time!

“What’s for lunch, Mama?”

“Do you know what we’re gonna have for lunch today?”

“I’m hungry. Is it lunch time soon?”

By noon time that’s all. I. hear.  So, I put on my best lunch lady hat and get to work.  Here are some examples of what a typical lunch is at our kitchen/home school table:

  • Grilled turkey or ham sandwich with cheese, some oven fries, and fresh fruit on the side
  • Good ole PB&J with grapes or banana or applesauce
  • Tuna melts with cucumber/tomato/feta salad
  • Cheese quesadillas with chips, salsa, and guacamole
  • Maxed-out cheese burgers and corn chips
  • Assorted submarine sandwich with lettuce, tomato, roasted red pepper, and cheese (with olives on the side)
  • Buffalo chicken finger salad complete with red onions, French’s French Fried Onions, and blue cheese crumbles
  • And a big favorite, Veggie Delights (recipe included below)

Ingredients:

–whole wheat pita pockets
–hummus (home made or store bought)
–provolone cheese
–sliced cucumbers
–sliced tomatoes
–sliced red onions
–bean sprouts

How to make it happen:

Open up the pita pockets and spread hummus on top and bottom.  Layer provolone, cucumbers, tomatoes, onions, and top with bean sprouts.  Close the pita up and put in the oven (at 350*) for no more than ten minutes.  The purpose of putting it in the oven is to get the cheese all ooey-gooey.  (I have  found that wrapping each Veggie Delight in it’s own foil helps, too.)   Once they come out, plate ‘em up, and serve with blue cheese dressing for dipping.  You don’t have to use the blue cheese dressing, but, to us, everything is better when dipped in blue cheese.

Can we come live with you? ;) Your lunch menues sound awesome! My kids get so sick of the same ol’ thing over and over, and we end up hitting the Mickey D’s at the end of the road waaaay too often!
